Easy Meals on a Time Crunch

I don't know about you but there are days where I come home from school absolutely drained! On those days the last thing I want to do is cook super. I have a few recipes that keep me fed on these days. They are quick, easy, and taste so good!

 

1. Cheese Dip

While this one is probably not the healthiest on my list, it is super easy and tastes so good! This can be completed in a few minutes as soon as you get home and typically makes enough for left overs!


Ingredients:

1lb Block of Velveeta Cheese

1lb of Ground Beef

1/2 bottle of Salsa

Dash of Milk


Directions:

1. Cook and ground up the pound of beef.

2. Slice the block of velveeta cheese and place in the crockpot.

3. Add dash of milk, 1/2 bottle of salsa, and cooked ground beef to the crockpot.

4. Let heat stirring occasionally until the mixture is heated and runny.

 

2. White Chicken Chili

I learned this one from my aunt and uncle while visiting them in England. This is another crockpot meal as you will quickly realize I love. It seems as though I am attracted to the easiest possible recipes and most often they are crockpot recipes.


Ingredients:

1 Can Black Beans

1 Can of Kidney Beans

1 Can of Corn

1 Can of Rotel

4 Chicken Breasts

1 Package of Ranch Dressing Mix

8 oz Block of Cream Cheese

1 Can of Chicken Broth


Directions:

1. Lay chicken breasts on the bottom of the crockpot.

2. Drain and rinse all beans and pour into the crockpot.

3. Drain corn and pour into the crockpot.

4. Dump rotel, ranch dressing, cream cheese, and chicken broth into crockpot.

5. Cook covered until chicken is cooked.

6. Shred chicken, stir soup and enjoy!

 

3. Cheese Soup

This is one of my favorite meals. Breadsticks are a great addition to this meal and taste even better dipped in the soup!


Ingredients:

1 1/2 C Carrots Chopped

5 C Potatoes Chopped

2 Tsp Salt

1 Can Evaporated Milk

1 C Milk

1lb Velvet Cheese Cubbed

1/4 C Butter

2 C Ham

Pepper to Taste


Directions:

1. Mix potatoes and carrots in large pot.

2. Add salt and enough water to cover the vegetables.

3. Boil 20 minutes.

4 Slightly mash potatoes.

5. Remove from stove and add remaining ingredients.

6. Return to stove and heat on medium until bubbly.

 

4. Ham and Cheese Buns

Now these are not your regular ham and cheese buns. THESE ARE DELICIOUS! Every single person that has tried these has loved them and they are super easy to make. The best part is that you can prepare early and save in your freezer. These are also the best reheated meal I have had!


Ingredients:

2 Dozen Buns

2 lbs of Sliced Honey Ham

2 lbs of Sliced Swiss Cheese

2 Sticks of Butter

1/4 Cup Brown Sugar

2 TBSP Mustard

2 TBSP Worcestershire Sauce


Directions:

1. Assemble buns, ham, and cheese on a cookie sheet.

2. Melt together butter, brown sugar, mustard, and Worcestershire sauce.

3. Drizzle sauce in and over the buns.

4. Cover top with tin foil and allow to sit overnight or for a few hours.

5. Bake covered at 350 degrees for 20-25 minutes.

6. Take off foil and bake for 5 minutes.

 

5. Chicken Alfredo

This is another amazing crockpot recipe and it is so yummy! Minimal ingredients and super quick to make!


Ingredients:

2 Chicken Breasts

2 Jars of Alfredo Sauce

1 Package of Penne Noodles


Directions:

1. Cut chicken into chunks and lay in the bottom of the crockpot.

2. Poor package of noodles on top.

3. Pour in both jars of Alfredo sauce.

4. Cook your meal stirring occasionally.
